Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and lightly oil a 9x13-inch baking dish.
  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the ground beef and diced onion. Cook for about 8-10 minutes until browned, draining any excess fat.

Cooking

  • Introduce the minced garlic, sliced cabbage, kosher salt, black pepper, smoked paprika, and thyme to the skillet. Cook for another 8-10 minutes until the cabbage softens.
  • Stir in the cooked rice, diced tomatoes, tomato sauce, beef broth, and apple cider vinegar. Let the mixture simmer for 3 minutes to blend the flavors.
  • Transfer the mixture to the prepared baking dish and cover with foil.
  • Bake in the preheated oven for 25 minutes, then uncover and bake for an additional 10 minutes.

Serving

  • Let the dish rest for 5-10 minutes before serving.
  • Garnish with fresh parsley before serving.

Notes

For variations, you can use leftover roast beef or turkey instead of ground beef. Adding cheese on top during the last few minutes of baking will create a lovely crust.
