  • 2 tablespoons taco seasoning Essential for authentic flavor.

  • 1/2 teaspoon kosher salt Adjust according to taste.

For the Dressing

  • 1 cup sour cream Provides a creamy texture.
  • 1 teaspoon taco seasoning Additional for flavor.
  • 1 tablespoon fresh lime juice Adds brightness to the dressing.

For the Salad

  • 6 cups chopped romaine lettuce Base of the salad.
  • 1 can (15 oz) black beans Drained and rinsed.
  • 1 cup sweet corn kernels Fresh or canned.
  • 1 1/2 cups chopped Roma tomatoes For a burst of color.
  • 1 1/2 cups shredded cheddar cheese For richness.
  • 1 large diced avocado Provides healthy fats.
  • 1/2 cup sliced black olives Adds flavor and texture.
  • 1/4 cup fresh chopped cilantro For garnish.
  • 2 cups crushed tortilla chips Add right before serving for crunch.

Instructions
 

Preparation

  • Cook the ground beef in a skillet over medium-high heat for 6-8 minutes, breaking it into small pieces.
  • Drain excess fat from the skillet.
  • Add the taco seasoning and water to the skillet; stir well and simmer for 3-4 minutes. Adjust salt if necessary. Set aside to cool.
  • In a separate bowl, whisk together sour cream, remaining taco seasoning, and lime juice.

Assembling the Salad

  • Prepare the fresh ingredients: drain black beans and corn, chop romaine lettuce, dice avocado, slice olives, and chop cilantro.
  • In a deep serving bowl, layer the ingredients starting with romaine lettuce, followed by black beans, seasoned beef, corn, tomatoes, cheese, and the creamy dressing.
  • Top with avocado and olives, then sprinkle with fresh cilantro.
  • Add crushed tortilla chips just before serving to maintain crunch.

Notes

For added flavor, serve with lime wedges and salsa. This salad can be customized for various dietary needs.
