Preparation

  • In a bowl, whisk the eggs until smooth.
  • Heat 1 tablespoon vegetable oil in a non-stick skillet over medium heat, pour in the eggs and swirl to coat the pan.
  • Cook for 1 minute until set but soft, remove and slice into ribbons.

Cooking

  • In the same skillet, add the remaining oil and minced garlic; sauté for 30 seconds until fragrant.
  • Add the green beans to the skillet; stir-fry for 3-4 minutes until they are tender yet crisp.
  • Drizzle in soy sauce and sesame oil, and stir to combine the flavors.
  • Return the egg ribbons back to the pan and toss gently to mix everything together.

Serving

  • Serve warm, optionally over a bed of rice to soak up the savory goodness.

Notes

For added flavor, top with sesame seeds or chopped green onions. Adjust the cooking time for the green beans based on your preferred crunchiness.
