Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until well mixed. Press firmly into the bottom of the springform pan.
  • Bake the crust for 10 minutes and let it cool completely.

Make the Filling

  • In a large bowl, beat softened cream cheese with 1 cup sugar until smooth.
  • Gradually add eggs, mixing well after each addition.
  • Add sour cream, heavy cream, and vanilla extract, beating until smooth.
  • Divide the filling into two bowls. Add pineapple juice to one bowl and orange zest with food coloring to the other, mixing until uniform.

Assemble and Bake

  • Pour the pineapple filling onto the cooled crust. Spoon the orange mixture over the top and swirl with a knife.
  • Dot the cheesecake with pineapple preserves and orange marmalade, swirling them lightly.
  • Bake for 55-60 minutes until set but slightly jiggly in the center.
  • Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
  • Cool completely at room temperature, then refrigerate for at least 4 hours, ideally overnight.

Serving

  • Remove the cheesecake from the springform pan, slice, and enjoy!

Notes

For added texture, use fresh pineapple instead of canned. Consider mixing in a pinch of cinnamon for a spiced crust. Serve chilled with whipped cream.
