Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a bowl, combine crushed graham crackers, melted butter, and granulated sugar. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  • Bake for 10 minutes and let cool completely.
  • In a mixing bowl, beat the cream cheese until smooth. Gradually mix in the powdered sugar and vanilla extract.
  • Once well combined, fold in the pureed strawberries until everything is harmoniously blended.
  • Gently fold in the whipped cream to lighten the mixture.
  • Pour the filling over the cooled crust and smooth out the top.
  • Chill the cheesecake in the refrigerator for at least 4 hours, ideally overnight.

Serving

  • Before serving, top with additional whipped cream and sliced strawberries as desired.

Notes

For a delightful twist, consider adding a squeeze of fresh lemon juice to the strawberry puree or experimenting with the crust by swapping out graham crackers for crushed Oreos or digestive biscuits.
