Preparation

  • Preheat your oven to 325°F (163°C).
  • In a bowl, combine crushed graham crackers, melted butter, and 1/4 cup sugar. Mix until well incorporated, then press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  • In another large bowl, beat together the softened cream cheese and 1 cup sugar until smooth and creamy. Add the vanilla extract and sour cream, mixing until well combined.
  • Gently fold in the sliced strawberries into the cheesecake mixture.
  • Pour the cheesecake filling over the prepared crust in the springform pan, smoothing the top with a spatula.
  • Bake for 50-60 minutes or until the center is set but slightly jiggly.
  • Allow the cheesecake to cool in the pan at room temperature, then refrigerate for at least 4 hours or overnight.
  • Before serving, top with whipped cream and additional strawberries.

Notes
