Cross and Glaze Ingredients

  • 1/2 cup all-purpose flour Needed for creating the cross.

Instructions
 

Preparation

  • In a small bowl, stir the lukewarm milk, yeast, and 1 tablespoon of the sugar together. Allow it to sit for 5-10 minutes until foamy.
  • In a large bowl, whisk together bread flour, remaining sugar, cinnamon, mixed spice, nutmeg, and salt.
  • Add yeast mixture, butter, egg, and orange zest to the dry ingredients. Mix until a shaggy dough forms.
  • Turn the dough onto floured surface and knead for 8-10 minutes until smooth and elastic. Incorporate sultanas and mixed peel.

Rising and Shaping

  • Place kneaded dough into a greased bowl, cover with a towel, and let rise for 75-90 minutes until doubled in size.
  • Punch down the dough, divide into 12 equal pieces, and roll each into a smooth ball. Arrange in a lined baking pan and let rise again for 45-60 minutes.

Baking

  • Preheat oven to 400°F (200°C). Mix all-purpose flour with enough water to create a thick paste and pipe crosses on each bun.
  • Bake for 20-22 minutes until golden brown and sound hollow when tapped.
  • Warm apricot jam with a tablespoon of water and brush over warm buns for a shine.
  • Allow to cool before serving.

Notes

Ensure yeast is fresh and active for fluffiness. Let the dough rise in a warm spot if needed. Consider soaking sultanas in warm water or juice for extra flavor.
