Ingredients
  

For the Crust

  • 1.5 cups 1 1/2 cups of vanilla wafer crumbs For a crispy texture

  • 1 can (20 oz.) 1 (20 oz.) can of crushed pineapple Provides sweetness and moisture
  • 3/4 cup 3/4 cup of granulated sugar For sweetness
  • 1/2 cup 1/2 cup of cold water To dissolve the gelatin
  • 2 envelopes 2 envelopes of unflavored gelatin For structure
  • 1 package (8 oz.) 1 (8 oz.) package of cubed cream cheese For a rich filling
  • 1.5 cups 1 1/2 cups of halved seedless grapes Adds flavor and texture
  • 1 can (11 oz.) 1 (11 oz.) can of mandarin oranges, cut in half For a tangy note
  • 1 jar (10 oz.) 1 (10 oz.) jar of maraschino cherries, drained and roughly chopped Adds sweetness and color
  • 1/2 cup 1/2 cup of finely chopped pecans For a nutty crunch
  • 2 cups 2 cups of whipped topping (like Cool Whip) For a fluffy finish

Instructions
 

Preparation

  • In a small bowl, blend the vanilla wafer crumbs with melted butter until they resemble wet sand.
  • Press the mixture firmly into the bottom of a 9-inch springform pan.

Make the Filling

  • In a saucepan over medium heat, warm the crushed pineapple with sugar for roughly 5 minutes until fragrant.
  • Sprinkle the gelatin over cold water in a separate bowl and let it sit for a minute.
  • Stir the softened gelatin into the warm pineapple mixture until fully dissolved.
  • Add the cubed cream cheese and stir until smooth and creamy, then let it cool slightly.

Combine the Fruits

  • Stir in the halved grapes, mandarin oranges, chopped cherries, and pecans into the pineapple mixture.
  • Gently fold in the whipped topping until well combined.

Assemble the Cheesecake

  • Pour the filling into the prepared crust and smooth the top with a spatula.

Chill

  • Cover the cheesecake with plastic wrap and refrigerate overnight or at least 6 hours.

Serve

  • Carefully remove the cheesecake from the pan, slice, and serve chilled.
  • Garnish with fresh fruit or crushed vanilla wafers if desired.

Notes

Consider using fresh fruits for more flavor and a richer taste by substituting half of the whipped topping with heavy cream. Adding unsweetened shredded coconut can enhance the tropical vibe.
