  • 4 oz marshmallow cream Provides chewy quality.
  • 1 teaspoon pure vanilla extract Enhances flavor.

Preparation

  • Prepare your workspace by lining two baking sheets with parchment or waxed paper. Set out a tablespoon scoop or two spoons.
  • Toast the pecans in a dry skillet over medium heat for about 4-5 minutes, stirring often.
  • In a heavy saucepan, combine the granulated sugar, evaporated milk, cubed butter, and fine salt. Heat over medium while stirring constantly until it reaches a boil.
  • Maintain a steady boil for 7-8 minutes, stirring continuously, until the mixture reaches a temperature of 235-238°F.
  • Remove from heat and quickly add the vanilla chips and marshmallow cream, stirring until melted and glossy.
  • Mix in the vanilla extract and the toasted pecans, folding gently into the mixture.
  • Drop heaping spoonfuls onto the lined sheets, spacing them about 2 inches apart and sprinkle with flaky salt if desired.
  • Allow to cool at room temperature for 30-45 minutes until firm, then transfer to an airtight container.

Notes

Ensure all ingredients are at room temperature for best results. Experiment with different nuts or add a hint of cinnamon for variations. Can be paired with coffee or hot chocolate.
